Your weekend brunch is sorted with these quick and easy banana pancakes
Dry ingredients
140g self-raising flour
1tsp baking powder
2tbsp light soft brown sugar
Pinch of salt
Wet ingredients
1 ripe banana, mashed
2 large eggs
25g butter, melted
125ml milk
For the topping
1 ripe banana, sliced thinly
Icing sugar, to dust
Maple syrup
Handful of fresh blueberries
Method
1. Combine the dry ingredients in the mixing bowl, then make a well in the centre
2. Pour the wet ingredients into the well and attach the mixing bowl the the KitchenAid with the whisk attachment in place
3. Gradually increase the mixing speed to 6 and leave for a couple of minutes until a smooth batter has formed, free from any lumps of flour
4. Heat a knob of butter in a large frying pan then ladle in small dollops of the batter leaving space between each for the pancakes to spread out
5. Place the banana slices on top of each dollop
6. When bubbles start to form on the surface of each pancake flip them and cook for a further minute
7. Serve piled high on a plate, dusted with the icing sugar and drizzled with maple syrup. Sprinkle over a few blueberries
